
Fresh Salsa
A great side dish for anything a little bit spicy or on its own with some corn chips

Ingredients
- 1/2 green capsicum, small dice
- 1/2 ripe avocado, small dice
- 2 spring onions thinly sliced
- 1 green chilli, thinly sliced
- 1 large tomato, seeded and chopped
- 1 clove garlic, crushed/grated
- Generous pinch of sea salt
- Juice of half a lemon/whole lime
- ½ tsp ground cumin
- Handful of coriander leaves, chopped (optional)
Instructions
- Finely chop capsicum, avocado, spring onions, chilli and seeded tomato.
- Toss in a bowl with garlic, cumin, salt and lemon/lime juice.
- Top with coriander (if using).
TIPS
The easiest way to seed a tomato is to cut it into quarters and scoop the inner flesh out with a teaspoon
Don’t have much time – leave out the capsicum and garlic and just do a rough, chunky chop on the rest of the ingredients.
