Quick Baked Potatoes

Baked potatoes are so delicious but they take so long to cook, not any more.

Ingredients
  

  • 1 medium to large washed white potato
  • Oil
  • Salt and pepper

Instructions
 

  • Preheat oven to 180°C.
  • Stab potato on all sides (12 – 15 holes) with a bamboo skewer (if you use a metal skewer or fork you will end up with grey streaks at the holes, but they will taste the same).
  • Put on a plate (4 – 6 at a time if doing multiple potatoes) and cook on high for six minutes.
  • While they are cooking mix a little oil, salt & pepper in a bowl.
  • Toss the hot potato in the oil mix and wrap in a square of aluminium foil.
  • Place in the oven to cook for 20 – 30 minutes.

TIPS

Top with your favourite topping to make a meal or serve as a side to barbecued meats.
