Quinoa Salad

A great side or a meal on it's own – when you cook quinoa this way it is perfect every time

Equipment

  • 1 Small saucepan 1 – 2 litre
  • 1 Sieve

Ingredients
  

  • 1 cup quinoa
  • 1 1/4 cups stock or water It will be tastier if you use stock
  • 1 medium red capsicum diced
  • 1 medium green capsicum diced
  • 6 spring onions sliced
  • 1 cup frozen sweetcorn
  • 150 grams feta cheese crumbled
  • 1/2 cup chopped herbs mint, parsley or coriander works best
  • 1 tbspn red or white vinegar plus some for final dressing
  • 2 tbspns olive oil plus some for final dressing
  • salt & pepper to season

Instructions
 

  • Rinse quinoa with cold water using the sieve
  • Place in saucepan with the stock and leave to sit for 15 minutes (no heat)
  • Put on medium heat (with the lid on the saucepan) and as soon as it comes to the boil turn down to low and leave for another 15 minutes
  • While the quinoa is resting and simmering prepare your fresh ingredients
  • Place the diced capsicums and sliced spring onions in a large salad bowl and dress with vinegar, olive oil and salt & pepper. Stir and set aside
  • When the quinoa has finished simmering for 15 minutes take the lid off and quickly throw in the frozen corn and gently stir through with a fork.
  • Turn the heat off completely and leave to rest for 10 minutes.
  • At the end of the 10 minutes combine the cooked quinoa with the capsicum/spring onion mix and stir through.
  • At this stage adjust the seasoning with additional vinegar and olive oil until you are happy with the taste. Go gently with this, as it is easier to add a little more than remove too much dressing.
  • Once you are happy with the level of dressing and seasoning top the salad with the crumbled feta and chopped fresh herb/s. You can serve to the table like this or stir through.

TIPS

Vegan Option: use vegan cheese to replace the feta or leave the cheese out completely.
Great with grilled and roasted meats
Makes a nice light lunch on it’s own
This is the best way I have found for cooking quinoa – a few more steps but worth the trouble.
