
Set and Forget Chicken
I love this method of cooking a chicken; moist, delicious and I can read a book while it’s cooking.

Ingredients
- 1 whole chicken, cut in half
- 6 lemon zest slices (take lemon zest off using a peeler)
- 3 garlic cloves, peeled and halved
- 1 cup white wine
- Olive Oil
- Salt & Pepper
- Dried oregano
Instructions
- Preheat oven to 200°C
- Cut chicken in half length ways (full cut, ending up with two halves.)
- Lightly score drumsticks, thighs and wings.
- Put wine, lemon zest and garlic in a heavy based casserole dish which will be a snug fit for the chicken).
- Pat skin that isn’t in the wine nice and dry with paper towel.
- Drizzle over olive oil and rub over skin (won’t need much, maybe a tablespoon).
- Season with salt and pepper and oregano.
- Place uncovered in oven at 200°C.
- Cooking time will vary depending on the size of the chicken.1kg: 45 minutes to an hour >1kg: 1 – 1 1/2 hours.
TIPS
- Serve with a leek risotto, or salad and potatoes, or roasted veggies.
- Use the left over chicken to make chicken mix sandwiches
- Freeze the cooking liquid to use in gravies, stews or casseroles.
