
Cannellini Beans with Roasted Tomatoes

Ingredients
- 1 small onion diced
- 1 tin cannellini beans
- 1 punnet cherry tomatoes
- 1 heaped tsp horseradish cream or Dijon mustard
- Handful of spinach leaves (optional)
- Oil
- Salt & Pepper
Instructions
- Put cherry tomatoes in a baking pan lined with baking paper, drizzle with oil, salt & pepper and toss.
- Place in oven at 180C for 15 – 20 minutes
- Heat frypan to medium heat, add a splash of oil and the onions
- Cook onions until soft
- Add tin of beans including liquid
- When beans have warmed through stir through horseradish/mustard and tip in roasted cherry tomatoes including cooking juices and spinach (if using)
- Gently squash the beans with a fork, you want some smooshed and some whole
TIPS
Tips
Great alternative to mashed potatoes, try with pan cooked sausages
No cherry tomatoes? Used rinsed, tinned cherry tomatoes and put in pan with the onion
