
One Pan Dumpling Dinner
We all love dumplings; these are easy to make, delicious and dinner is cooked in one pan.

Ingredients
- 2 packets wanton wrappers (about 40 wrappers)
- 500 gms pork mince (preferably not lean)
- 2 tbsps hoi sin sauce
- 8 spring onions - finely chopped
- 3 heaped tbsps finley grated ginger
- 1-2 1 – 2 red chillies, seeded and finely chopped (optional)
- 1 1/2 cups stock (or water)
- 2 bunches Chinese greens (plus oyster sauce for serving optional)
- Soy sauce to serve
Instructions
- Cut corners from wonton wrappers (just in the block not individually).
- Mix pork, hoi sin, spring onions, ginger, chillies. Best mixed with clean hands.
- Lay out wrappers and place teaspoon of mix in middle of each wrapper.
- Wet edges (easiest to do with a spray bottle of water), pull long sides together to meet in middle on top of meat and pinch together to make a dumpling. Don’t worry about fancy pleating.
- Place on baking paper until they are all assembled (if you’re not cooking them for a while, cover with a damp teatowel and place in the fridge).
- Rinse Chinese greens and divide into three batches.
- Once the dumplings are all made you are good to go!
- Heat 2 – 3 teaspoons of oil in a large frying pan which has a lid.
- Place 20 dumplings in and cook on medium/high heat until they have brown bottoms (2-3 minutes).
- Now move them together a bit to make room for the greens, put the greens and 1/2 cup stock in pan and quickly put lid on.
- Cook on a medium/low heat for 6 minutes (you want them cooking fastish but not evaporating all of the stock).
- Take lid off, turn heat down and cook for 2 minutes until your bottoms are crispy.
- Serve with rice, greens and soy sauce
TIPS
- There’s a quick video that might help
- You don’t want pork that is too lean, it’s the fat through the meat that makes the dumplings juicy.
- I use square thin white wonton wrappers (which is why I cut the corners off) but you can use the round ones – they’re just a little thicker.
