
Simple Berry Parfait
I came up with this simple, delicious dessert when I had unexpected guests ten years ago and it is one of my most popular.

Ingredients
- 250 gms frozen berries (your choice)
- 1 heaped tablespoon pure icing sugar or caster sugar
- 250 gms mascarpone
- 1/2 cup pouring/thin cream
- 1 punnet fresh strawberries or raspberries to garnish
Instructions
- Place the frozen berries in a bowl and sieve over the sugar.
- Stir the sugar through the berries and cover with cling film.
- Leave to macerate out of the fridge for two hours or, if using the next day, in the fridge overnight.
- Combine the mascarpone, cream and vanilla in a bowl and lightly whisk.
- Spoon alternating layers of berries and mascarpone (two levels of each, starting with berries and finishing with mascarpone cream) into a small glass or bowl.
- Top with fresh berries and drizzle over the macerating juice.
- Place in fridge until ready to serve.
TIPS

- Crumble a biscuit over the top for a little texture.
- Mascarpone mix can be made when you macerate the berries and be kept in the fridge.
- Can be assembled in advance, just leave off the fresh berries and macerating juice until you are ready to serve.
