
Hash Browns
Hash browns are usually loaded with oil, this recipe is light on oil and big on flavour

Ingredients
- 1 kg washed white potatoes (unpeeled)
- Oil
- Salt & Pepper
Instructions
- Grate the potatoes on a coarse grater (not too fine)
- Squeeze out as much liquid as you can (you can wrap in a clean tea towel and squeeze, or press into a colander)
- Spread on a dinner plate and cook, covered in the microwave for six (6) minutes on high
- While you are waiting for the potatoes to cool down (they’ll be too hot to handle): heat the oven to 200C and line a flat baking tray with baking paper
- Spray or brush the baking paper with oil
- Mould a heaped soup spoon of potato, with your hands, to create a flattish disc and place on baking tray.
- When all your hash browns are lined up on the baking tray, brush tops with a little oil (or use oil spray bottle) and season with salt and pepper.
- Place on high shelf in oven and cook for 20 – 30 minutes, turning half way through the cook.
TIPS
This might seem like a lot of work for something you can buy cheaply from a drive-thru or the supermarket freezer – but it is so worth the extra effort and a healthy alternative.
The first time you try this do it on a weekend, when you have plenty of time and can enjoy the process and savour the reward.
